The colors of Eggplants vary from white to almost jet-black, with the most common hue being purple. The four major types of Eggplant are:

  • Cylindrical types which include Mirabel, Vernal and Mini Fingers


  • Sicilian types which are round and purple in color


  • Japanese types which are cylindrical and pinkish in color

    What to Avoid
    Avoid eggplants with soft spots or those that are flabby or shriveled.

    Selection
    Look for firm eggplants that are light for their size. Skin should be even-colored and free of blemishes.
